So, you’ve decided to host Thanksgiving dinner this year. Congrats! Thanksgiving is my favorite holiday. Any holiday spent around eating great food is number one in my books. There are many shortcuts and tips to make the day go smoothly and let you have some fun not spending the entire day in the kitchen.

Make sure if you have turkey that you leave enough time for it to thaw. You need one day for every 4 pounds frozen. Always thaw in the refrigerator for safety. Place the turkey in a large glass dish, I use a glass cake pan. Put it on the lowest shelf in the fridge. This keeps the chance for cross contamination at a minimum. If you prefer a fresh turkey order early! I’ve purchased the fancy expensive ones in the past but have not found them worth the price. I’ve used Butterball® for years and they always turn out well. Never stuff before roasting! It’s too dangerous, stuffing does not always reach safe temperature levels by the time the turkey is done.

Planning for such a large meal can often overwhelm cooks that are not experienced. Don’t let that stop you. I am a great list maker. First start with your menu. Use a large legal pad. Write your menu on the left side of the page. Leave a few lines in between for cooking schedule. On the right-hand side write your shopping list. I check off items as I purchase. Stuffing cubes, canned goods, snacks and even perishables like butter can be purchased well ahead of time. I found butter at Jewel last weekend for $1.88!! Many stores continue their sales through Thanksgiving so shop early!

Along with planning the menu it’s good to gather all the dishes and serving pieces you will need. Follow your menu and set out the dishes on the dining room table. I rewash everything, especially pieces I use infrequently. Throw a clean white sheet over the table to keep the pieces free from dust. Need more serving pieces? Borrow! Or check out department stores. Many have housewares on sale during holiday season. For cooking I use disposable aluminum as much as I can but always have a pretty dish for serving. Matching not necessary! I have many old dishes given to me by family members no longer with us. It’s nice to reminisce at holiday time and remember those passed.

RESTAURANT REVIEW – MOE’S CANTINA

Moe’s Cantina is in the heart of Wrigleyville at 3518 N. Clark Street. We were there on the night the Cubs won the World Series and I have to admit there are a lot of great things about this restaurant.

Since we did a deal on food, we were able to taste through a good portion of the menu.  As a starter, we had the guacamole which is prepared upon order and tastes fresh because of it.  It’s not a large portion but it hit the spot with the light chips we were given on the table. I’m definitely a fan of warmed tortilla chips. Since we were there for a long time, we decided to take our time with ordering food. We shared the skewers for the table – steak and shrimp. The steak was cooked and seasoned very well. The shrimp were grilled in a hot sauce and also came with pineapple which was an interesting and tasty combination.

For our dinner portion we all tried something different to share. I had the tilapia tacos. I really enjoyed the light flavoring and how it hit the spot without being too heavy. Another at our table had cheese quesadillas for dinner. The shrimp tacos did not have the same flavor as the skewers and were satisfying nonetheless. And then there came the elotes. This is a traditional corn dish and was amazing. I literally could have eaten the entire bowl myself but we had to share.

The service for such a busy night was pretty good. Our server really made the effort to stop by and check in on us. As the evening was progressing, she knew that wait times were going to be longer and advised us on the best way to place orders and/or drink orders. The cost for a meal at Moe’s runs about $15-30 per person without drinks. To some this may be expensive but it was well within our budget. The atmosphere is definitely loud though so if you want a more lounge-type location, this is not the place for you. I would tell anyone who is coming to Wrigleyville for a game or concert that this is definitely a place to try at least once.

It’s time again to celebrate one of the best comfort foods out there at this year’s Mac & Cheese Fest held at the UIC Forum (725 W. Roosevelt Rd.) in the University Village/Little Italy neighborhood this Saturday offering two sessions (lunch from 12:00 p.m.-3:00 p.m. & dinner from 6:00 p.m.-9:00 p.m.). This event challenges top Chicagoland chefs to create their own spin on mac & cheese while attendees indulge in all you can eat from each participating restaurant as well as voting, along with a panel of foodie judges, for whomever takes home the coveted THE GOLDEN NOODLE for best mac & cheese! Also, a portion of the proceeds will benefit the Ronald McDonald House!!

Celebrating their 6th season of American craft beer, Beerhoptacular is being held at Cinaspace Chicago Film Studios (2558 W. 16th St.) west side of downtown this Saturday with two sessions (1:00 p.m. & 7:00 p.m.). We’re entering into the month of Thanksgiving and giving in general, so while you’re decluttering your home in preparation for the holidays, please consider donating gently-used or new clothing to the Elks National Veterans Service Commission this year. Donations of warm winter clothes, preferably large men’s sizes, can be dropped off next Friday, 11/1, at the Elks National Memorial Building at 2750 N. Lakeview Ave. between 12:00 – 6:00 p.m. during the Veterans Day Supply Drive. Your donations will be distributed during the Chicago Winter Standdown on 11/18 which gathers veterans to the Northwest Armory (1551 N. Kedzie) for a day of providing meals, haircuts, winter gear, flu shots, and information regarding housing, employment, legal assistant and VA benefits for Chicago’s veterans who are homeless or in need.

There are also homeless animals to consider with the coming of the winter weather. Bangkok Belly, Asian Cuisine and Sushi Bar, at 6132 N. Northwest Hwy. is holding a fundraiser for Chicago Pet Rescue from 11/6 – 11/10. Mention Chicago Pet Rescue with any dine-in or carry-out order from Sunday 11/6 to Thursday 11/10 and 15% of your total will be donated to Chicago Pet Rescue which is a volunteer-based non-profit agency that places homeless animals with foster homes en route to adoption. Donate your pocket change to help raise funds to purchase holiday pies for the needy. From now through 11/18, Loaves & Fishes Community Services have stationed collection locations at Naperville Park District Administration building (320 W. Jackson Ave.), Alfred Rubin Riverwalk Community Center (305 W. Jackson Ave.), Fort Hill Activity Center (20 Fort Hill Drive), 95th Street Center (2244 W. 95th St.), Knoch Knolls Nature Center (320 Knoch Knolls Road), and Riverwalk Cafe (441 Aurora Ave.). Past years have approximated these small donations to $600 per season yielding over 100 pies for distribution to families in need through the Loaves & Fishes Community Food & Nutrition Program.

It’s the first week of November already! Boy, does time fly. Thanksgiving week will be here before we know it. Now that we have enough time it’s good to plan for an easy and stress-free holiday.

Think about your menu. You probably have some idea of how many people you are having so plan accordingly. Thanksgiving is a most forgiving menu. Add or subtract a few guests and you are still good.

Turkey and fresh baked goods like pies should be ordered at least two weeks ahead. Plan now for quantities. Bakery pies yield 8 servings. As for turkey, 2 pounds per adult and 1 per child is good and will yield sufficient leftovers. Make sure to stock disposable containers in various sizes for guests to take food home.

There is plenty of time now to try a few new recipes. We all have our family favorites but it’s great to introduce at least one new item a year. Roasted root vegetables are easy and appeal to many eaters with their sweet taste. They can also be made ahead of time for ease on the big day. Mashed skin on red potatoes with garlic are delicious. Sweet potatoes are yummy too. Go online and search. I love americastestkitchens.com and foodnetwork.com.

Go through all your dinnerware, silverware and serving pieces. I bet last year you thought you could use a few more. If you are doing a buffet for a large gathering, see about renting. For one time a year it’s more cost effective than buying. Borrow slow cookers in various sizes to keep side dishes warm. You can buy small slow cookers small enough for hot dips! 

If you work as much as I do it’s hard to find the time to do a thorough house cleaning. Now there is enough time to take it one room at a time. Don’t forget baseboards and ceilings. Check for carpet cleaning specials. Declutter as much as possible. Less to dust! Better yet spurge on a cleaning professional. For around $200 you can get your house cleaned in one day. Money well spent I say!

The sooner you plan for the holiday the less stress you will have. Imagine everything going so smoothly and having enough time to enjoy yourself and your guests. It can be done!

When heading over to the West Loop for brunch, you really need to go check out MAD Social located at 1140 W. Madison Street.  We had a group of five of us so got a chance to taste a good portion of the menu.

All of our servings were a very good size, especially the crispy Brussel sprouts. One order of those could feed our whole table. Someone had the traditional steak and eggs which was quite good, especially the sweet pepper succotash. Two of our party had the Havarti Mac & Cheese. This was topped with crispy Brussel sprouts and had sweet corn and wild mushrooms in the mix. One of our party had the Tuna Tower which was a light and filling dish. One of us had the MAD Shakshouka which is a spicy skillet and can be made more spicy if you request it.

The staff was extremely good. They were there but not hovering and gave really good suggestions from the menu. As far as ambience, it was a great place to spend your afternoon. The music wasn’t too loud. The seating was comfortable. There were a couple TVs up so you could watch sports if you wanted (and this weekend the Cubs fans were out in full force).

The overall cost without drinks is very affordable between $11-30 per person. With drinks, you are probably looking at $50 per person. The location is very easy to get to and there is pretty good parking in the area.

Minimum Property Requirements For VA Home Loans

There are plenty of advantages of having a VA home loan compared to a conventional mortgage, including a minimal down payment requirement, no Private Mortgage Insurance (PMI), and competitive interest rates. Most military members, veterans, National Guard members, and spouses of military members who died on active duty can apply for a VA loan and reap the rewards that come with some mortgages.

However, not only do you have to be eligible for this specialized type of home loan, so does your property. The reasons for this is to protect you against any unexpected and unpleasant surprises that can end up being very costly.

In order for a home to qualify for a VA home loan, it needs to meet Minimum Property Requirements (MRPs) to help ensure that military personnel and veterans have a safe place to live.

The property you’re trying to obtain a VA mortgage to pay for must be accessible all year long, no matter how your next-door neighbor’s property is being used. There also needs to be adequate space between your home and the one next door to allow for sufficient maintenance of each building.

Water, Sewer, and Mechanical Systems

Roof

The roof of the home can’t have any leaks, and if any repairs were done in the past, at least three layers of shingles had to have been removed before replacing the roof with new shingles. 

Attic and Crawl Space

These spaces need to have natural ventilation that is void of any dirt or dust, and have plenty of room for any ductwork, plumbing, and electrical repair.

Structure

The actual building itself needs to be in good shape. That means no termite damage, mold, rotting wood, broken windows, bad construction, moisture, or exposed electrical wires should be present.

The Bottom Line

Basically, the MPRs associated with VA home loans require that a home should be safe, sanitary, and structurally sound for those who live in it. A VA appraiser will need to assess the home and the lot it sits on to ensure that it meets these requirements before a VA home loan can be approved.
